*3  Observed the following potentially hazardous foods to be improperly cooled: Couple of small tubs of food items that were still warm were stored on top of each other with the lid firmly closed. Potentially hazardous foods shall be rapidly cooled, utilizing such methods as limiting depth of food to 4 inches or less, agitation, quick chilling or water circulation external to the food container Having the lid popped open allows for that hot air to escape and cool quicker instead of creating a warm pocket of air keeping the food item warm longer. *35  Observed the following outer openings to not be self-closing and/or tight fitting: The back door is missing part of the weather strip creating a decent sized gap. Provide for all openings that lead to the outside to be self-closing and tight fitting 15 Days
*45  Observed an insufficient number of certified food handlers to be employed at this facility: Facility just has the cook licensed at this time. It would be a good idea to have another person with the sanitation license in case the cook calls off sick. Next Inspection
14  Observed the following improper food contact surfaces: inside edge of ice machine in rusting. Provide for all food contact surfaces to be smooth, easily cleanable, non-absorbent, corrosive resistant, and light colored. Next Inspection
